I have been wanting to make these Palmiers or as they call it little heart biscuits in India for quiet some time now. I love these little crunchy sweet and salty biscuits they look so adorable . These biscuits taste so good , they are almost addictive. Making them is not very difficult , the only problem is getting ready made puff pastry sheet You get those easily in any super market but in India it’s very difficult to find. I found the perfect solution for that in Mumbai there are bakeries around the corner of most streets your best bet would be to request your local baker or Khariwala to sell you just the puff pastry sheet. He would be reluctant but if you get persuasive enough he might just sell you that puff pastry sheet.
Phew!!!! So much of hard work . You might be wondering why not just make the puff pastry at home. Believe me it’s just not worth your while to make puff pastry its best to buy it ready made, even most professional chefs prefer buying readymade.
Once you have gotten your hands on the puff pastry sheet the rest is literally a cake walk.
You just need to make sweet and salty mixture for that I have make a mixture of sugar and rock salt and my Christmas flavouring mixture.
I know it’s just September and Christmas is few months away but you can say I am just trying to get in the Christmas spirit.
My Christmas flavouring is a mix of cinnamon powder, nutmeg powder zest of one lemon and orange.
- 500 gms of puff pastry sheet (Preferably butter ones)
- 10 gms of rock salt
- 140 gms of caster sugar
- 1tsp of cinnamon powder
- 1tsp of nutmeg powder
- Zest of one lemon and orange
Just roll the pastry into a rectangle about a 1 inch in thickness
With a pastry brush apply some water on the pastry
Next add the Christmas flavouring (sprinkle generous amount of sugar)
And start rolling tightly from both ends when the pastry meets in the middle seal it with some more water.
With a sharp knife start slicing the pastry around two inches thick
Put this on a sil pat mat or baking parchment and bake in a preheated oven at 160 degrees for 25 -30 mins or until u see the biscuits getting a nice golden brown colour.
