Rock Sugar, Anise & Cardamom Cake

Rock Sugar, Anise & Cardamom cake is a simple tea cake which is power-packed with flavour.

Wild turmeric leaves have become my go-to flavour. I love the scent of the leaves almost like Pandan leaves.

Using leaves instead of parchment paper is such an eco-friendly method of baking plus the flavour the leaves emit just enhances the flavour of this cake.

When it comes to cakes, everyone at home loves simple tea cakes. Given a choice any day It will always be tea cakes over elaborately iced cakes or mousse cakes.

Maybe that’s why most of my recipes are simple with a lot of emphasis on flavours.

I love experimenting with herbs and spices rather than using artificial essences and from these experiments, I came with this flavour combo of rock sugar, anise & cardamom cake. 

 I have become a huge fan of rock sugar, not only for its medicinal value I love the flavour, It almost like a crystallized form of sugar cane juice.

The anise & cardamom is a combination which Indians have been using as a mouth freshener for centuries and all this combined into a cake and we have a winning combination.

I have used a bit of jaggery it gives it some depth and also I simply love the malty colour and flavour it gives to the cake.

All in all, I am super happy with this experiment and this recipe is going on my hall of fame.

Recipe for Rocksugar, anise & cardamom cake.

Quantity: 500 gms / 6inch round cake tin.

Time:15 Mins making and 35-40 mins baking time  

Baking Temp: 180-185 degrees (Preheat the Oven)

Ingredients Quantity
Rock Sugar/Sugar candy 100 gms
Whole Wheat Flour/Atta 100 gms
Corn Starch 2 Teaspoon
Milk Powder 2 Teaspoon
Baking Powder 1 Teaspoon
Anise/Sauf 2 Tablespoons
Ghee/Unsalted butter 125 gms
Eggs 2 Whole eggs+1 Egg yolk
Salt 1/2 Teaspoon
Jaggery 40 gms
Milk 30 ml

 

Method

  • Weigh all your ingredients
  • First, take a pan and start by roasting Anise & Cardamom pods 
  • Transfer this in a coffee grinder +add rock sugar (If the sugar pieces are too large wrap the sugar in a kitchen cloth and crush it a bit using a rolling pin)
  • Now the rock sugar is safe to use in a coffee grinder, next add jaggery
  • Give it a good whizz in your coffee grinder
  • The next step is to sieve all the dry ingredients, that is whole wheat flour, baking powder, milk powder, corn starch together.
  • After this add the sugar mix to the flour
  • Next, add the ghee and mix together follow it up with eggs & milk.
  • Once the batter is ready, bake in a preheated oven for 35-40 mins
  • Let the cake cool down completely
  • The cake tastes best the next day. The flavours are much more pronounced
